"In House = Readily Available" This formula is used to organize the work environment so that all items related to the business is readily stocked in their respective stations also referred to as a "Zip Code". According to this principle the only acceptable reason a staff member does not have any single work item available at their fingertips at all times is if the item out
of stock.

The restaurant industry is an industry that commands that the work environment remains in "Service Ready" mode. This is accomplished using "TOUCH READY". This principle structures and designs the work environment to have all service items ready to use upon a staff member's "touch". Nothing frustrates a staff member more than grabbing an item during a busy shift only to discover it has to be readied for the guest's use.
